Chicken Waldorf Salad

Description

This waldorf salad contains apples and celery. Apples are full of fiber which helps keep your digestive tract running smoothly and could potentially lower cholesteral. Apples also contain antioxidants which help to reduce free radicals and inflammation in the body. Celery is high in vitamin K which is essential for blood clotting and helps to maintain bone health.

Ingredients

1⁄3 c
low-fat mayonnaise
1⁄3 c
nonfat or low-fat plain yogurt
2 t
Lemon Juice
1⁄4 t
Salt
3 c
chopped cooked chicken breast
1  
med. red apple, diced
1 c
halved red or green grapes
1 c
sliced celery
1⁄2 c
chopped walnuts, divided (toasted if desired)

Instructions

Whisk mayonnaise, yogurt, lemon juice and salt in a large bowl. Add chicken, apple, grapes, celery and half of the walnuts. Stir to coat well. Serve topped with the remaining walnuts.
